I searched around for an easy, yummy muffin recipe and after making a few different ones, I combined/invented a little one of my own. They are yummy considering there is no sugar added and super easy to make. so, I thought I'd share. 1 egg 1 c. skim milk 1/2 c. vegetable oil 1/4 c. maple syrup or honey 1 c. mashed banana 2 c. whole wheat flour 3 tsp. baking powder 1/4 tsp. nutmeg 1 tsp. cinnamon 1/4 cup flax seed (you can do more. I do 1/2 cup sometimes) Preheat oven to 400 degrees. Beat egg, then add with milk, oil, maple syrup, and banana. Mix the rest of the ingredients until just moistened (batter should be lumpy). bake 20-25 minutes. Makes about 10 in the big muffin tins. Enjoy! and if anyone has any recipes lemme know. I like muffins because I bake a bunch every few weeks and then freeze some. These freeze great. Can be reheated in microwave for like 20 seconds.
