Not a big fan of the XTi/D40 bodies...too small to be comfortable.
20/30d, 17-50 2.8, cheap manual flash, stand, umbrella, and a set of cactus triggers.
maybe change out the lens depending on what you are wanting to shoot, maybe a 2nd lens instead of the flash setup.
Tamron 17-50 2.8 is definitely on the list of things to buy.

Everything...photography is a hobby of mine and moving up from a P&S has been long overdue.
then i would say no matter what body you go with, get a 17-50
if you can find him three hookers, i've got the rebel xt

Used 20D, Used 70-200 f/4L, personally...but that depends on which lens you'll get more use out of.
Or Used 20D + 28-135IS and another lens of some sort would also work...or 20D + that tamron.
But basically the 20D. They're cheap as hell and Canon hasn't made any kind of epic strides on the crop-frame bodies since.
Also, a Canon 540EZ or two cause they're 98% as good as a 580, minus the TTL and wireless capability. So you just need to learn to make them work manually which really isn't tough.
used 30d/40d and a tamron 17-50/2.8 + camera bag, memory card, extra battery, grip if you can afford it
start with the tamron 17-50/2.8
when you can afford it.. canon 70-200/4L
used flash and tripod at some point
20D, 70-200F4L, extra batteries and CF cards, and the 50mm f1.8
Or this, pretty much spot on. I forgot about the 28-135, in fact I think I'm gonna change my suggestion to 20D + 28-135 + good tripod + batteries + CF cards and the next step when you have more money damn well ought to be the 70-200 F4L
I used a 30D for a long time with 28mm as my widest focal length.. it was fucking awful. and the 70-200/4L is a great lens, but I would hate to have it as my only lens. if you ever want to take a photo indoors, get the 17-50
This and the most expensive calendar and marker you can buy with the left over cash.
I'd buy a D200 and Tamron 17-50. Both new.
Followed quickly by a sb-600.
I just figured Craigslist for everything.
Refurb D90, note that you will go over your budget a bit with your Tamron lens though.
Tamron will run me roughly $400, which leaves $600 for the other stuff. I've found a couple of used D80's for $500 or so...I'd rather have a 30D than a 20D to be honest (for the bigger LCD), so it looks like I have some searching to do.
d200 brand new is 600 at best buy
edit: nevermind. they raised it to 670. fuckers.
Why so cheap? Isn't that a higher end body?
Edit: Just checked...$679, but still $1k cheaper than a D300
