I am a student. I am creating a business plan for school. I need to determine if an investment of time and money building a website will be profitable. Think webmasters of blogs with similar interests would be open to talk to me about their CPTM and other relevant data?

no idea what CPTM is....but if you are asking for the eCPM, expect something like 20-30 cents.

No one will willingly give you this information.. Advertising and traffic sources are the few things webmasters keep completely secret. Anyone that does give you this info is fullofit unless the market is already stupid saturated that it's beyond worth bothering with it.

Alexa has so many cool statistics. I noticed it doesn't show page views though, whats up with that?

CPTM means clicks per targeted 1,000. I think they are worth more.

How do you suggest I create a probable/expected revenue model then?

A decent way to get an idea is to check the site sales sites/forums to see what is selling or has sold in the past. Most will give average traffic and revenue which you can work numbers for. Of course much of it will be inflated somehow but you can get a general idea for various genres that way.

of course you could always just find some decent sized site that offers it's own ad serving and ask for details as if you were in interested advertiser.
