I just picked up a new 26in widescreen HDTV LCD (sanyo). I was going to use it on my 17 Powerbook.

Just use the S-video out of the powerbook to the HDTV video 1 input, correct?

DVI would be best, that way you can actually get HD resolutions.

dvi->dvi, or dvi->hdmi depending on what your tv has for inputs.

SVideo will only get you analog tv resolution.

So you need a DVI to HDMI cable. They aren't cheap unfortunately.
