I didnt realized that when adjusting white balance on yoru camera, when you use a 18% card, or some people use a non-recycled coffee filter, you are supposed to take a picture of the actual light source, and not the actual object you are photographing........is this correct?

yes, you are using a grey card to get a reading of the COLOUR TEMPERATURE (note the u) of the LIGHT falling on the subject.

18% grey cards are for setting exposure, you meter off the card. you would generally calibrate your white balance by doing a WB shot aimed at something white (altho grey should work too).

since i post process in Apple Aperture if I am going to be doing a shoot under the same light conditions I will just take a picture with a grey card on the subject then later I can determine via Aperture the Kelvin tempture of the light, and apply that to photos taken from the same angle.

Made some white balance cards using PS with 5"x7" 12% 15% & 18% fills lazer printed on some cardstock. Works good and cost next to nothing.
