Obviously all the typical things, but do you roll and allow neck cranks and heel hooks?

I have yet to tap out from a neck crank but if someone puts me in a double nelson I will tap the instant that thing is locked on.

At my BJJ Academy, pretty much anything goes in the higher level. While at my grappling club in my university, I tend to tell everyone not to go for heel hooks mainly because they can cause major injury with little effort.
