Should I be concerned that out of the 7 largest (and reccomended) install shops in my area, only 3 have portfolios of past work they have done, and only one has a WELL designed speaker demo room?

I'm thinking of going with the install shop that has the demo room as they have a VERY large portfolio of installs for customers and their own competition vehicles; although they advertize as an alarm install shop and they the are charging $75 an hour plus parts for installs; but for initial "artwork" which includes sketches and ideas for layouts on the custom install for your vehicle is free

I assume your area has a car shows...maybe hit those up and see what kind of stuff you like, then go to those shops
