I want to print out screenshots of a website I made for my portfolio. I have a screencapture program, but the images always come out a little grainy or discolored. What's the best way to go about doing this?

best way is open your web-browser to the site exactly how you want it to look. then hit the "print screen" button on your keyboard. Open Photoshop, PaintShopPro, or even MS Paint, and paste the clipboard -- it will be a perfect copy of whatever was on your screen. crop as neccessary, and save in the file format that floats your boat.
