What stats matter the most for a video card? Pipelines, memory/core clockspeed, memory, etc. Also would a SLI card work by itself?

A video card that is SLI compatible will work by itself.

The newest nVidia 8800 series is by far the best.

A sinlge 8800GTX is as fast as a pair of 7900GTX cards.

if you got money to burn, get the 8800gtx, if not, get the Radeon X1950XTX 512mb

at this point with vista and dx10 right around the corner, you should either go with an 8800 or wait for other dx10 cards since everything else is about to be outclassed
