Finally got my first mac in a looong time and I couldn't be happier.

Q: I want to move my itunes collection (music and any information related to itunes) over to my mac. Can I do this with a firewire cable? and will it be that much faster than Ethernet? Also, windows puts some other crap in my music folder on my pc (like thumbnail information), so I just want to transfer the music files. Is there a wizard that does this?

Just share the folder that has your music in it on the PC, then connect from the Mac. To do this, just hit "apple-k" in Finder and put in "smb://computername"
Once connected, just drag that folder to iTunes, only the music will be copied. Same thing for photos. I just did this for my wife's switch from a pc.
