Tilapia recipe...have some.

    Since my Turkey meatloaf recipe from 2007 was bumped I figured i would share another recipe.


    Pan seared Tilapia with a Mango Pineapple Relish


    Relish:

    3-4oz of diced pineapple
    3-4oz of diced mango
    1/2 medium jalapeno very finely minced
    1/2oz (about 3 THIN slices) red onion very finely minced
    Minced cilantro..to taste
    2 lime wedges
    1 tbsp Vodka

    Mix diced fruit, minced jalapeno, minced onion and cilantro in a small bowl. Squeeze in lime wedges and add Vodka. Mix well and set aside.

    Tilapia:

    3-4 6oz tilapia filets
    salt and pepper to taste
    dried oregano to taste

    Preheat a med/large non-stick saute pan on med high heat and lightly spray with pan spray. Season the tilapia fillets on one side (top rounded side) with salt, pepper and oregano. Do this to your liking. Spray each filet lightly with pan spray also. This is to assure easy flip and no sticking. Tilapia is a very low oil and low natuaral fat fish so it will stick if you aren't careful. Cook top side down first for 3-4 minutes. Lightly spray the bottom side and flip very carefully. Be easy on the flip as they will break. Saute another 3-4 minutes and move to a plate. Top with mixed relish. Done.

    *quick note about tilapia*

    I buy the box of frozen fillets at Wal-Mart. It is 3lbs of individually wrapped fillets and runs about $12. Eack piece is 3-4 oz so two per person does the trick nicely.

    Serving recommendations:

    Steamed carrtos
    Baked sweet potatoes
    Steamed broccoli
    Sauted mixed veggies
    Spinach
    Brown rice
    Brussell Sprouts


    When you are done it should look something like this:

    I like to rub mine with the McCormicks Grill Mate Cinnamon and Chipolte dry rub and grill it. It's awesome.

    nice... i just use pepper, salt, and a shitton of lemon juice... dont mind it at all thoguh...taste good

    I have about 20 tilapia fillets in my freezer right now. BRB, defrosting.

    what's the turkey meatloaf recipe? I've got 2 lbs of ground turkey right in front of me, it'd be nice for something different

    nevermind, do you think 9x13 would work for 2 lbs?

    1 lb. ground turkey
    1 egg
    1/4 cup mined onion
    1/4 cup minced celery
    1/3 cup ketchup or castsup
    3 tbsp. A1 steak sauce
    3 tbsp. Heinz 57 sauce
    Approx 1 cup panko bread crumbs


    Method:

    Take minced veggies and saute' until tender and translucent. Add to meat mixture. Cook at 375 degrees in a WELL GREASED bread pan or form into a loaf in a 9x13 pan and until internal temp has reached 165 for better.

    1. Dust a few fillets on both sides with Tony Chachere's Creole seasoning
    2. Place in glass baking dish and drizzle 3-4 Tbsp of olive oil over them.
    3. Bake at 350 for 12-15 minutes.
    4. Serve with some brown rice and veggies. I prefer stir fried spinach with garlic.

    Yea, 9x13 will work. You need to make sure it's well greased with pan spray and shape it into a "loaf" of sorts. If the mix seems too thin or soft add more breadcrumbs.

    I just realized that said 9x13, that's a huge pan, I've always used a 9x5 for my meatloaf :eek3:

    just threw it in the oven, shaped it using a 9x5, then placed it on the 9x13
