tendon, healthy?

    this may sound disgusting to some of you, but on an asian diet, i sometimes eat tendon (beef tendon to be exact) in my noodle soup and was wondering, whats in it? (carbs/protein/fats/etc). to be specific, im talking about pho: http://www.vietworldkitchen.com/bookshelf/articles/pho_SJM.htm

    yeah. the texture is like jello but thicker and more chewy
