the word "beforehand" is one word, not two. Also, your quote is too wordy. I would try and shorten it as much as possible.

You repeat almost all of the same words in options 1-3, the only difference being very minor details like the number of hours and the price. There's no need to repeat yourself, it just sounds wordy.

"Photograph the wedding day for approximately 8-10 hours would of course include..." isn't proper grammar and sounds weird.

Why not just outline:

1. All shots you discussed will be included.
2. Assistant will be with you of the same skill.
3. All photos are done in raw.
4. Photos will be provided on a DVD within 2 weeks of wedding date.

Option 1: 6 hours of photography. $2200.
Option 2: 8-10 hours of photography. $2500.

Then mention the optional engagement shoot.

How are the prices? Are they suitable?

when you sell your services, you self yourself, your attitude, your enthusiasm, your personality, etc. You make yourself and your services 'personal'. If I've never met a person and I just get an email, I'll have to do a face to face before I tell them what I offer. That way, they know me and we discuss preliminary stuff of what they're looking for and I can tailor the package to what they want. That way they're happy, you're happy and you have a better potential at booking rather than seeing a bunch of numbers and packages on a piece of paper.

just my $.02

I agree with the wordy part... I would break it down into sections if you want to keep the same verbiage you have there: Intro letter, "congrats on your...." pricing "Option 1, Option 2" then terms and conditions as a final page, "all prints will be in RAW, assistant to have same skill, all prints rights in data to be turned over at completion of shoot"

as a perspective client I would want one page with the packages and prices so I could quickly narrow it down to what I wanted, the technical mumbo jumbo would just get in the way.

Prices are reasonable but at least maybe include one large printed photo for the bride/groom of their choosing for them to frame

"thank-you" does not need a hyphen.

also:

All photos will be shot in RAW (highest quality) format giving you the most flexibility for editing beyond the standard edits that I will perform. (i.e. improved clarity, color, cropping etc.) photos will be saved to a DVD and given to you within one week of the photo session.

is not necessary.

" Please find below the prices broken down to help you plan for your big day!"

I dont think that sounds correct. "I've listed the price options below so you can pick which one suits you best." Something like that would be better, imo

That is a whole bunch of blah blah and difficult to wade through.
Wordy contracts are fine IF that is legal verbiage that is required to be there.
Yours is full of fancy fluff that adds nothing. It doesn't lend an air of professionalism, just the opposite.

You give "options" but repeat virtually everything in there and stuff it full of fluffy stuff that is a bear to wade through.

The bit about RAW -- unless they're photographers... who cares that you "All photos will be shot in RAW (highest quality) format giving you the most flexibility for editing beyond the high quality edits that I will perform."

That's just simply part of what you do. It's assumed you have your process/workflow nailed down already.

If you must, talk about it briefly elsewhere, but in the options description? Do you also describe the nutritious high-protein breakfast you eat so you can provide them with the highest quality attention to detail on the day of?

Be careful of saying "ALL photographs..will be provided". Really?
You want to contractually state that ALL photographs are provided? You give away creative control pretty easily...

Try this on for size:
