all 7.1 receivers support 5.1 output as well right? I only want a 5.1 system, but all the good receivers are 7.1, so i can just leave the rear speakers out of the system??

    Is this true?

Yes... it totally depends on the source format.

Most DVD's these days are still encoded in either Dolby Digital, Dolby Pro Logic 2 or DTS which are all 5.1 surround formats.

Some special edition DVD's and now BR and HDDVD's will come with Dolby Digital EX, DTS Neo: 6 or DTS ES which are 7.1 surround formats.

Some recievers are able to process a 5.1 signal into 7.1, but it usually doesn't sound any different than 5.1. Most mid to low range recievers will have nothing coming through the two back surrounds if the source signal is a 5.1 format.
