I'm going to try out Christophers routine, but my question is how will I know what amount of weight to start out with?

I'm afraid of either starting to low and not adding enough on each additional set, or starting too high and now being able to add more weight or even complete the other sets.

Is there some way to guestimate what works, or is it simply a matter of trial and error?

Umm, trial and error. See what weight works, who cares how many times it takes you to see how much you'll use. It's not going to take more than one workout.
