I have a domain setup on my shared host and the email mx records pointing towards google aps.

I want to switch the domain from the shared host to my dedicated host, but, dont want to mess with the email, if I just change the nameserver entries for the domain to my dedicatged nameserver, will that effect the email?

Depends who is managing your DNS. If it's on the host side, you will need to switch the nameserver entries and re-create the MX records on your new server. If it's on the registrar side, all you should have to do is switch the DNS and your MX records should be unaffected.
