if i run dual dvi's with 2 video cards, do they video cards need to support SLI or will a dual dvi set up still work by just having 2 video cards and 2 monitors without any extra set up?

You should be all set. When running in SLI it will disable the three monitors that aren't your primary windows monitor.
To set it up you'll just need to hook up your primary monitor and the rest you'll "extend my desktop onto this monitor." There is also a great program called UltraMon that I know a lot of people really like that will help you manage your screens.

The only catch is that sans-SLI, you will most likely be limited for gaming across multiple monitors. Highly recommend a video card with dual dvi out instead of two cards....
