Just open a Terminal and type

    sleep 3600; killall iTunes

The 3600 is the number of seconds before quitting iTunes (an hour here).

If you want to get fancier, you can probably do something easy with Automator or AppleScript to get iTunes to just stop playing rather than have it killed by the kernel.

I would definitely be in if someone has AppleScript skills to have a user set the amount of time and allow it to kill iTunes and properly put the machine to sleep.

(that is to assume the one above isn't ideal...i don't know)

I'd also want the computer to go to sleep too...that was the part I wasn't sure of.
