    OpoQ's Grilled Steak & "Sweet" Potato Salad

    1/2 cup soy sauce

    1/4 cup real maple syrup
    6 cloves garlic, diced
    1 tablespoon diced fresh ginger
    1 teaspoon mustard powder
    1/2 teaspoon sesame oil
    1/4 teaspoon Tabasco sauce
    1/2 cup beer or water
    1 teaspoon Burbon/Whiskey
    4 beef rib eye or blade steaks





    1 small brown onion



    2 tablespoons low fat butter



    400g Baby Potatos

    1/3 bunch Shallots
    1/2 bunch Chives
    1/3 lemon
    1 egg yolk [to add flavour to the Low Cholesterol Mayo]
    1 clove garlic
    1 teaspoon vegetable oil
    200g Low Cholesterol Mayonaise
    2 tablespoon Light Sour Cream

    In a medium size mixing bowl, combine soy sauce, maple syrup, chopped garlic, grated ginger, sesame oil, Tabasco sauce, and mix well.

    Now add beer [or water] and stir lightly to mix [I meant to buy beer but forgot - I used water instead and that seemed like a flawless substitute].

    Prepare steaks by scoring any fatty outside areas on steak with a knife, [this prevents the steaks from curling when grilling].

    Place steaks in a large bowl or fla plastic dish [that has a air tight cover] and pour marinade over. Using a fork to punch holes in steaks so that the marinade penetrates into the steaks. Turn steaks over and repeat punching holes.

    Cover let marinate in the refrigerator for at least 1 hour or longer.







    You can also refrigerate and marinate overnight.










    Once your Sweet Potato Salad is ready you can start too grill your steaks. 10-15mins each side on medium-high.

    "Sweet" Potato Salad






    First wash, peeled and dice the shallots. Cush, peel and dice garlic glove. Dice chives - then combine all in bowl. Sprinkle with disired amount of salt and pepper, cover with plastic wrap and store in the fridge.


    Peel, wash and cut the baby potatos into small pieces and dunk into boiling water. Keep an eye on the density of the actual pieces rather than the feelwhen you're stirring; if it feels hard when you're stiring that doesn't exactly mean there not ready to drain. It only takes a moment for the potatos to get too soft.

    Once potatos are cooked to desired density cool off with running tap water. Then combine all ingredients, including the mayo, egg yolk, sour cream and lemon, in one large bowl. Cover and store in the fridge for atleast an hour.





    If you don't know how to grill the onion and butter to make the steaks garnish then you shouldn't be in the kitchen; slice the onion thin and combine with butter and fry. You may add some of the OpoQ Steak Grill Marinade to the onion if you desire.




    If you've cooked the steack right every piece should be succulent. My pieces actual exploded with juices in my mouth with each piece. All in all in was a tasty meal.

    I cooked it today - it takes some time but well worth it. The meat just explodes with juices with every bite, literally.

    That looks fucking delicious. A lot of preparation for the food though. I'll save that for those special weekend splurge meals when I have time to cook.
