    So after a long day of cutting fish, serving fish, and eating fish. I come home late at night to cut more fish!

    How did you wrap the fish before freezing?

    Do you just refrigerate the sashimi portion? How quickly do you have to eat them? Those are huge sashimi portions.

    Just paper towels then plastic wrap. There are still slime on them and when it thaws, the paper towels will capture the moisture that melts.

    Within 2-3 weeks (3 weeks max and even then, that would be pushing it since my freezer isn't an industrial freezer, just a regular one that came with the apartment) and the others should be fine since I'll cook them.

    A lot of people don't know but salmon in the US has to be frozen for 7 days which is forced by the FDA for any type of salmon in any restaurant.

    Few weeks ago my uncle caught some trout. He smoked it and brought us like 5 pounds of it. Best food I've ever had.

    i have some salmon right now as well, any recommendations on simple recipies?
    would you marinade salmon?

    i realized that while i have successful ways to prepare ahi/tuna steak, or a white flesh fish (halibut/bass), i dont got shit for an good idea on somethin like salmon. not even sure if its the type of fish that would benefit from a marinade since it has so much natural fatty flavor.



    thats actually a superb deal.
    once caught a 176lb halibut in AK, got ~115lbs of meat from it.
    came home and saw that whole foods was charging $18.99/lb for fresh AK halibut. :eek3:

    I actually came in here hoping for the fish and not the fighter. I must say I was not let down. :o I am part native and am allowed to spear fish them (it's super fucking fun).
