I just bought a Canon EOS 300D. I can't seem to locate the black and white settings. Do I custom one of my parameters to take b&w shots?

this leaves you with more room for post-processing when converting from a color image rather than shooting b&w straight from the camera (there's no option to do this on the rebel, anyway).

can't do it in camera. Do it in photoshop.

a couple of ways to do it
    1.) Desaturate
    2.) Convert to Grayscale
3.) Channel mixer --> monochrome --> adjust each color's percentage individualy
the last one takes the longest but can produce the best tones. Also use the photofilters, shadow/highlight options when working with b&w
