I understand that the rear thumb dial controls shutter speed and the front dial controls aperature. Can you set this to be reversed in the menu?

Yup. I have a d200 so it might be different, but to change it I go to:

    Menu
    Custom Setting Menu
    Controls
    Command Dials
    Change Main/Sub to ON.

That way the front controls the shutter speed and back controls the aperture.

Yup, doable in the 700 too. You can customize a lot of buttons...I have one of them set to the horizon leveler to avoid pelf'd horizons :-D

If I had already bought a Nikon body with 2 dials I would.
