What are some need-to-have programs and other software I should look for?

Depends on what you are going to be doing with the computer...

Make sure to delete the crap that comes on the machine that you have no use for and install protection software.

    My recommendations for anyone are...
    - Avast (anti-virus)
    - ZoneAlarm (2-way firewall if you want it; otherwise the Windows one is fine)
    - Spybot (for malware)

It's a media center pc, going to use it for music/movies and that kind of stuff. Just hunting for ideas on what to get when I fire it up.

Is k-lite still the codec pack to get? Or should I get the CCP or whatever?

If you want a media center GUI then I'd recommend Media Portal. It's fairly easy to get everything set up and it works really well. It is my favorite of all the media center programs that I've tried. I use Media Player Classic with K-like though because I do a lot of organization with shortcuts which aren't read by any media center programs.

    DVD Shrink for ripping dvds
    AutoGK for encoding to AVI

besides codecs,.... the crap I have in my htpc:

    players (winamp, vlc, etc.)
    compression tools (7zip, winrar, etc)
image tools (PowerISO, Daemon tools, etc)
converters (WAV to MP3, WMV to AVI, etc)
dvd authoring/burning software (Nero, DVDshrink, ConvertX, etc)
sync software for my portable players

    pretty much that's it

I suggest 7-zip just because I prefer it.
    Also try IrfanView for photos
