im trying to stream media from my PC to my xbox/ps3.
my router is an apple airport extreme, which doesn't support UPnP.

    so

i was thinking - if i picked up a cheapo wired router, could i plug that into my airport for internet, and have the PC/Xbox/ps3 on it and make a little UPnP subnet?

You could, but there may be addressing issues. I think it should be ok as long as you turn the DHCP server on the cheap wired router off, so that everything connected to the wired router will be assigned an IP by the AirPort's DHCP server.
