My gf's cousin has a 2000 Mustang, with Universal aftermarket 17's. She popped a tire and the rest also needing to be replaced, I offered up my Nitto's from my bimmer that I wasn't using. Now the tires on the her 17's are 245/45 and the ones off my bimmer are 235/45, I wanted to see if you guys thought that she would be able to get away with that size or if she has to have 245's. TIA

If they're that close, they should work.

Hopefully, plus since they're aftermarket 17's I figure it'd be like 17x7 so since I'm running 215/45/17 on my gf's accord with 17's I figure 235's will work on her cousins 17's. I'll probably find out today when they install them.

Stock Mustang 17's use 245/45's, right? Those should be 17 x 7.5, if I remember right. Either way, it's such a small difference, it'll barely be noticable. Stock tires on my Escort were 195/60/15, I used 215/55/15's without a problem, and I'd seen people use 175/70's on the same rims..........so use that as an example.

They're going to be narrower(barely) and shorter(also barely). So the speedometer is going to be off by about 1.4%, reading 60mph when you're actually going 59.2mph...so not a big deal. Go for it, should fit fine.

Well, she told me that her rims are 17x7 and considering that my gf has 17x7 on her accord running 215/45 perfectly fine, I don't think there should be a problem running 235/45 on her cousins 17x7 correct?

235s are about 9.25 inches wide. You'll be fine, just do it. Wheels can fit all sorts of different sizes of tires on them. Just for example, when I bought my wheels, they were 16 x 8 and they had 215/40/16s on them. So I replaced them with 245/45/16s. Big difference in width, same wheels. Hell, VW guys get tires that are smaller than the wheels and have them stretched onto the wheels. To an extent, the only thing you have to worry about is the speedometer being thrown off from different tire circumferences. Get it done, it's fine.
