I stumbled upon a food network show that talked about making Ricotta cheese. It looked so simple so I googled the recipe to make cottage cheese. It turns out to be even simpler. http://www.essortment.com/all/makecottageche_rloh.htm Reading the recipe made me curious though. If we eat cottage cheese b/c of the caesin, and since cottage cheese's protein is made entirely from milk, wouldn't it make sense that cottage cheese should have the same protein profile as milk?
