Make your own cottage cheese at home

    I stumbled upon a food network show that talked about making Ricotta cheese. It looked so simple so I googled the recipe to make cottage cheese. It turns out to be even simpler.

    Reading the recipe made me curious though. If we eat cottage cheese b/c of the caesin, and since cottage cheese's protein is made entirely from milk, wouldn't it make sense that cottage cheese should have the same protein profile as milk?

    i believe the process of "curding" milk or whatever seperates the whey protein from the casein so cottage cheese turns out with a higher casein content than milk.

    I made my own cottage cheese in 6th grade. It didn't turn out quite right and I was turned off from it for a while. :(
