I want to make granola bars with whey protien. can you guess what will happen to it when it is baked at 375 for 15 min? I am assuming it will be fine, since meat has protien and it cooked with heat.

no, i do not believe all protein is bakable, in fact there are specific protein powders for cooking.

    seach results:

Let there be no mistake about it, heat damages protein. Especially whey protein. Heat processing ruptures and reforms protein molecules. It's called denaturing, and it makes digestion and absorption difficult.

then again, it might just be a plug for their brand of protien.

it not a plug. Thats why 'cold-filtered' proteins are typically more expensive, cause it takes longer to make but the protein is a higher quality.

Since most people don't like raw meat, there's a tradeoff, denature the protein so the food is more palattable.

denaturing just breaks apart a protein's structure, the amino acids are still there

it'd still be a high protein content food and your stomach breaks apart the peptide strands anyway for absorption
