is there an IM client that we can use in our company that will allow the admins to close off external chat access?

I think Lodus Sametime does what you need.

    Microsoft Office Communicator.

Awsome product. Great internal IM solution, blocked off external IMs. Logs all conversations to a SQL database.

We just rolled out Novell Messenger 2.0 and Grouwpise 7.0. Probably not a solution for you guy unless you're already using Novell.

Yeah, I was going to suggest an internal Jabber server. There's a wide variety of clients to choose from.
