If you don't have a smoker, build one

    This is pretty bad ass. Alton brown had it on his show. You stick a hot plate inside a flower pot, toss in some wood chips and you've got bbq.

    Did ribs last night, and I'm running pulled pork today. Key seems to be getting lucky on the hot plate. They're only $10 or so, but you need to find a round one (so it will fit). It seems that some shut off when they over heat and some just work great. I ripped out the guts on mine so I can adjust from outside, but it's basically hi/low/off so I still have to play around to get the temp right. Still looking for a round one.

    If you can find the right lid pot (taller one like alton brown) go with a 14" pot which should fit a standard webber grill. If not, and you use a dish setup like mine, get a 16" pot which will let the grill sit lower to give you more room for pork shoulder.

    You want to shoot for 225 degrees or so for most things. Ribs are ~3 hours, boston butt/shoulder is 1.75-2 hours per lb.

    A probe thermometer is a good idea so you can monitor meet temp without opening it.

    I got my smoker at walmart for under $150 ... you can cook a whole bunch of shit at once in it.
