Is it possible for human physiology to vary by nationality?

Diet and nutrition over time (in terms of evolution), I would assume, would affect the development of human physiology...since different cultures nutrition vary, would it affect the physiology of present-day humans? Even if they were raised in the same country (for example and African-American and an American-Indian both born and raised in the same area)?

That's completely possible, but not for the reason you gave. What happens to you after you are born has no effect on your genetics (barring mutations from radiation, etc.).

Evolution doesn't occur in a single generation. If given long enough, two nationalities that develop for extended periods of time in the same area (1000s -1000000s of years) will converge evolution wise (theoretically). However, this will be sped up by the inevitable crossbreeding and varied by the inevitable alien bodies that will enter the area.

I was reading some crazy report that the average size of Orientals has risen over the past few decades since fast food restaurants have been introduced in Asia. Average height and weight have noticably increased since our culture has become more popular over there

This also has alot to do with geography, japan is an island, so they eat alot of fish. China has a ton of people and not alot of food, so they eat alot of rice. Americans have alot of money/land so we eat whatever the hell we want.

there are food guide pyramids for different cultures/diets, there is an oriental one, a meditteranean one, an american one, etc.

the american one was just officially changed/updated this year.
