I've heard "30 sec jog, 30 sec sprint", "30 sec walk, 30 sec sprint", "45 sec sprint, 1:15 walk", + a billion more

what's a good one to go with?

I sprint as long as I can, which is usually between 45 seconds and a minute and 15 seconds, then jog.
The whole idea behind HIIT is high intensity, so time and perceived effort will vary greatly between people, so my high intensity may not be as high as yours.

1:3 work to rest ratio, keeps it more anaerobic
