Does it have to be high definition? Its gonna be expensive and unless you get a hard drive one you're gonna be switching tapes/disks every 20-40 minutes.

Actually, for recording format I'd prolly recommend SD cards, simply because of how easy they are to use and how cheap they are getting. Panasonic has a pretty decent HD camera for under $1000 now. Its their HD-SD series

The hard disk camcorders are the most convenient, but mine failed after 2 years and now freezes on bootup.

i have a little aiptek that's pretty damn good for recording training, etc. it was like 100 or 150 and i love it for what it does. put a 1 or 2 gig memory card in it and you're good to go, it's a pretty damn clear picture it records in 720 and works for training because it's so cheap.

I used a sony HD harddrive camcorder for the last UFC I went to. The footage is ridiculously sick, the only downside is it must be burned to blu-ray to be in HD format. (Unless you just sit and watch it on your laptop)

Yes, my 8gb card holds about 90 minutes at full quality. You can go to 16gb or probably more.
