There are a billion different ways to cook chicken, experiment.

Try baking it, grilling it, chicken chili, butterfly it and stuff it with a piece of cheese and ham, hell if you usually cook it in a pan with a little olive oil and some veggies use a different kind of sauce. Lite soy sauce, lite teriyaki sauce, lite stir fry sauce, some tomato sauce, or just make your own.

Chicken is one of the most versatile foods you can cook with and still keep it healthy. Don't be afraid to try something new.

If she still is being a finicky eater make her a seperate meal if shuts her up and keeps her happy.

    Meatloaf with lean beef:
    1 pound ground beef
    1 1/4 teaspoons salt
    1/4 teaspoon ground black pepper
    1/2 cup chopped onion
    1/2 cup chopped bell pepper
    1 egg, lightly beaten
8 ounces canned diced tomatoes with juice
    1/2 cup quick-cooking oats

    Topping:
    1/3 cup ketchup
    1 teaspoon honey
    1 tablespoon hot sauce
    1/2 tsp ground cumin
Preheat oven to 375 degrees F.

Mix all meatloaf ingredients well and shape into a loaf. Topping:
Mix ingredients for topping and spread on loaf after 10 minutes of cooking. Bake for 1 hour.

    Chicken Picatta
Pound out boneless skinless chicken breasts
Dredge in seasoned flour (salt, pepper, garlic powder) - you can skip this if you are trying to eat really clean
Saute in nonstick skillet with 2 tsp olive oil
Remove when brown on both sides
Add another tsp oil and some chopped shallots, saute for a few minutes
Add another tbsp or so of flour and cook for another minute
Squirt in half a lemon worth of juice, some white wine (can omit) and 1 cup of chicken stock
Bring sauce to a boil and then turn down to simmer
Toss into sauce any or all of: parsley, artichoke hearts, capers
Put chicken back in pan and heat through.

    Frittata
Saute any combo of veggies and meat in a 12" nonstick skillet with a little olive oil (diced cooked potatoes, peas, chorizo (a little goes a long way), leeks, onions, etc.)
Beat 6 eggs and 6 egg whites and season with salt and pepper
Pour eggs over veggies and lift edges to let eggs run underneath for a minute or so
Put skillet in oven @ 375 until eggs are set
Can run it under broiler to get the top nice and toasty if you like
