I use Nero Vision. I've encoded and burned about 50 DVDs with it and they all work perfectley.
Some people will recommend ConvertXtoDVD instead. It's pretty good, but I prefer nero vision

ConvertXtoDVD is great. I've used that a few times to make a DVD. All you do is drag and drop your movies and the program does the rest.

I use a suite of tools called tovid under Linux. It pretty much automates the entire process (including creating menus and stuff), which is awesome.
