Wet newspaper/phonebooks covered with denim or such as necessary.

I'd look online for denim covered gel tests if you want the closest to what might really happen option. Winchester has pics on their site. If you just want to play around and see a hollow point expand water is usually fairly easy for people to shoot into.

Will it go through a 1 gallon water jug or stay inside?

a 1 gallon jug of water will be left empty with a giant hole in it

a dozen+ gallons of water will stop it (i think)

It will probably stop within 5-6 gallons of water but of course be safe and sure of your backstop.

Go get some big chunks of modeling clay. I've seen that used on TV and if you something about a foot deep it should stop and hold it. You'll also get a good look at the typical wound cavity as well.

It'd be really cool if you compared ammo with the same grain weight and such.
    124 vs 124 and 147 vs 147.

The tests have already been done. If you just want to shoot stuff, that's fine, but you will not get a true evaluation or comparison without a more controlled environment and ballistic media. Water, phonebooks, and homemade gel are not the same thing as ballistic gel. They may give close approximation. But for the effort, I'd find something else cooler to shoot just for fun with target ammo. I'd save the carry ammo. And I'd find the pictures of the tests done by testing centers.

We always filled up a trash can with water and shot down into it.

Either load is a very good load. Use whatever you shoot more accurate with.

You can find comparisons online from countless tests.

Here is the expanded DPX (middle) compared to some conventional .45 ACP JHP's. Clockwise from the top left we have Federal 230-gr. Hydrashok, Remington 230-gr. Golden Saber, Federal Classic 230-gr. JHP, and Winchester (law enforcement only) Ranger 230-gr. RA45T.
