What kind of cheese do you guys use: the processed, reduced fat slices or the real deal?

I used to get the low cal, processed stuff but real cheddar is becoming tempting the more I have it

I like cheese a lot, so I keep a decent variety around the house for whatever use it might serve at that time.

I really LOVE sharp cheddar. With this stuff, it is nothing but the real deal, but I tend to keep it at a minimum.

I eat low-fat mozzarella sticks (string cheese) a lot too. It tastes just as good as regular, and the Frigo kind is only 50 cals, 2.5g fat, and 9g protein.

One of my favorite cheeses for sandwiches is Brick, so with this I only go the real deal as well.

Lastly, I use parmesean often, but again, only the real deal.

I like my cheese, and I like it to taste good. I keep the "real deal" cheeses to a minimum, but thoroughly enjoy them. Mozzarella however is what I comprimise on by going low fat, and I typically eat a lot of it.

I think it'd be safer to keep it all in one place, like say, oh I dunno, the refrigerator?
