    here is an example of a boot.ini

    [boot loader]
    timeout=30
    default=multi(0)disk(0)rdisk(0)partition(2)\WINDOWS
    [operating systems]
    multi(0)disk(0)rdisk(0)partition(2)\WINDOWS="Microsoft Windows XP Professional" /fastdetect
    multi(0)disk(0)rdisk(0)partition(1)\WINNT="Microsoft Windows 2000 Professional" /fastdetect

    Edit: Thats 2 os on one drive.

    You would just have to make sure that the the right drive is selected (multi, disk, rdisk, partition)

    Or I've seen some boot loader programs out there that can do it for you too. If you choose to edit the boot.ini, make sure you back it up first.
