    so many censored parts in the anime, it makes the anime really childlike and unserious. The manga seems much more deep and intense.

    This is basically a general rule that applies to almost all manga and anime, you can almost always be sure that with the anime, you're missing out

    Usually true, but not always.

    In the manga for Hellsing, it seems really random and the characters are off the wall, but in the anime, the overall mood was a lot better. For Samurai Champloo, anime > manga in terms of artistic quality.
