As a general rule, how low do the calories have go to be in 'starvation mode'

How many under maintenance would put you in starvation mode? I'm thinknig this could potentially be my problem since I'm cutting and losing mainly muscle (on a pretty clean diet)... calories around 2000-2500/ day @ 190 pounds

Technically, anything under maintenance is going to put you in starvation mode eventually- metabolic slowdown is a fact of dieting. Hence the need for refeeds, diet breaks and the like.

2000-2500 calories a day at 190 pounds isn't really what I would call cutting. What seems to be your problem? Are you losing weight too fast? What's your workout schedule like on that caloric allowance?

I've dropped 5-7 pounds but no BF% and in the mirror I see no progress except my muscles are deflated. you think 2000-2500/ day isn't cutting? I figure I maintain around 3K to 3500. I lift weights 4x a week, heavy compound stuff, no cardio.

Well, 2000-2500 calories a day at your weight is 10-11 calories a pound. So yeah..could be cutting, and if you're losing weight, obviously it's working.

How long have you been dieting? and are you going extremely low-carb or anything? That could cause the deflated look/feeling.

Your muscles are never gonna look as full and pumped when you're cutting. Those 5-7 lbs were probably glycogen and water. You aren't really gonna notice much difference from 5 lbs of weight loss unless you're already really lean anyway.
