I'm gonna be working at this place backpacking in New Mexico all summer where basically all my possessions I don't have in my pack, would have to be left in my car. I imagine in NM during the summer my car would get as hot as 110-120 inside. Over the course of 11 weeks in this heat, could that damage my laptop/game consoles/etc?

Inside the car it could even hotter down there. No question that cold kill electronic devices.

it'll get a LOT hotter than 120* in your car when the windows are up and it's 100 degrees outside.

you should find a climate controlled storage place to keep your valuables/electronics. not only will it keep them protected from the heat, but you won't have to worry about someone breaking into your car and jacking your shit.
