I'm not a huge anime fanatic, but i do love spectacular art, captivating characters and enjoyable music. Cowboy bebop is by far the best anime series i have seen. The setting is interesting, and it flows with great characters and interesting plots. Some anime try to be so futuristic and beyond your imagination, which i actually find them dull and irritable. I like the simple plots that are clever, and don't require too much conversation. I like visuals more than a twisted plot as told by the main character - for instance i enjoy anything by Miyazaki, I'm a huge fan and i've seen all his movies and even future boy Conan series.

I also recently watched The Alchemist and thoroughly enjoyed that as well.

So my question is, what other anime fit my taste? I tried watching ghost in the shell, but that was a little too much for me. Evangelion was OK, but then again not enough action and too much talking. Any other recommendations?

elfen lied - good visuals, good plot, good everything.

samurai champloo's pretty good too, it's made by the same people as bebop.

edit - and bible black, night shift nurse, and la blue girl

TTGL, Black Lagoon (surprisingly deep for what it appears to be, alot like BB), Elfen Lied is always good, Champloo is also good.

Afro Samurai (only half anime) had some of the most fantastic art I've seen, and pretty decent music too. The plot was garbage though. I thought it wasn't very good, but since plot is secondary for you, it might be up your alley.

Yeah, that's an awesome show but is complicated.

I agree with Black Lagoon, I enjoyed that on the same level as Cowboy Bebop. It's different but in ways has a similar feel.

Elfen Leid is good, but depressing at times (although the episodes from disc 3 have great dark humor)

Currently watching TTGL, can't tell you of its epicness because I'm only at episode 6 or so. It's good but I wouldn't say it reaches Cowboy Bebop or Black Lagoon for me.

well we see these threads every couple of days... no need to think if you just suggest the ones that stick out. and since its usually about the same genre you aren't really going to be expecting new answers.
